History Francis Miot

The Hôtel Bristol Pau invites you to discover Francis Miot, a French confectioner born in 1948 in Pau, in the Pyrénées-Atlantiques region.

Born into a family of passionate cooks, he is a self-taught jam-maker. For his studies, he joined the Lenôtre professional school. By the age of 20, he was working with top chefs in the South-West of France. A few years later, he set up the company "La Galette aux Myrtilles" and launched his first home-made jams in 1985.

He created a range of jams and, in 1987, gained his first national recognition when he was crowned Best Jam Maker in France, then international recognition with three titles as World Jam Champion, ranked outside the competition, in 1988, 1990 and 1991.

It was the first to produce fructose-based products with no added sucrose.

Francis Miot, who died in 2015, paid homage to the Béarn region with confectionery such as "Coucougnettes du Vert Galant", a reference to the history of Henri IV.

Maison Francis Miot, an international reputation

Located in the center of Pau, close to the Chateau district and a ten-minute walk from the Hôtel Bristol Pau, come and discover the different products on offer from Maison Francis Miot.

The company has four boutiques, all in south-west France.

From pot to pot, the small business grew until it took on a national dimension, winning the prize for Best Confit Maker in France at the Gesvres International Festival in 1987.

Francis Miot has developed a highly specialized talent and know-how in the preparation of jams.
He excels in the art of choosing good, tasty, fragrant fruit, while guaranteeing a very short cooking time to preserve all its flavours.

Rewarded many times for his art, the title of Triple World Champion established Francis as an unrivalled confectioner.

A confectioner by trade with a passion for the "A's", he diversified his production, surrounded himself with a team of chocolate makers and created the traditional confectionery known as "Féerie Gourmande".
Trained in the purest French tradition, at the Lenôtre school, Francis is keen to pass on to his teams the respect for French know-how and the quest for excellence and taste that he was taught beforehand.

In 1998, he and SG Sender (Gaston Lenôtre's "Monsieur Pâtissier") launched the famous Coucougnettes du Vert Galant.
Their success was such that a range of confectionery and chocolates with a wicked sense of humour followed, making Francis Miot "the polite man of delicacies"!

An insatiable creator, Francis has also passed on this desire to innovate in his recipes to both the Confiturerie and Confiserie teams.
